Edmond de Ayalan vuonna 1860 perustama Champagne Ayala sijaitsee Aÿ Grand Cru -kylän sydämessä vaalien osaamista, joka ilmentää Chardonnayn eleganssia – talon tunnusomaista rypälelajiketta. Julian Gout edustaa uutta samppanjanvalmistajien sukupolvea, jota ohjaavat vahva ympäristötietoisuus ja syvä kunnioitus terroiria kohtaan. Tässä master classissa Julian kutsuu vieraat aikamatkalle eri vuosikertojen Blanc de Blancs -samppanjoiden pariin ja tarjoaa ainutlaatuisen näkökulman Ayalan Chardonnay-osaamiseen eri kasvukausien kautta.

Jokainen viini on Grands Crus- ja Premiers Crus -tarhojen sekoite, joka tuo esiin vuosikerran luonteen talolle ominaisen matalan dosagen kautta. Vuoden 2019 vuosikerta loistaa rypäleiden poikkeuksellisen terveydentilan ansiosta. Haastavampi kasvukausi 2016 näyttäytyy elegantisti pienen tuotantomäärän samppanjan kautta, paljastaen vuoden aurinkoisen luonteen. Yhtenä tämän vuosituhannen merkittävimmistä sadonkorjuuvuosista pidetty 2012 yhdistää syvyyden, kompleksisuuden ja hienostuneisuuden. Pääsemme vertaamaan sitä ylistettyyn 2008 vuosikertaan, jonka sokerin ja hapokkuuden täydellinen tasapaino on synnyttänyt Ayalalle poikkeuksellisen hienon Blanc de Blancs -samppanjan. Lopuksi saamme maistaa pitkään kypsytetyn sekoituksen runsaita viinejä tuottaneelta, lämpimältä 2005 vuosikerralta.

Vuonna 2022 Champagne Ayalan kellarimestariksi nimitetty Julian Gout yhdistää työssään jatkuvuuden, pikkutarkkuuden ja innovatiivisuuden talon keskeisiä arvoja – sitoutumista, nöyryyttä ja jakamisen henkeä – vaalien. Vuonna 1989 Épernayssa syntynyt ja Vallée de la Marnen Romeryssä kasvanut Julian on elänyt koko elämänsä viinitarhojen keskellä. Viininviljelijäperheessä varttuneena ja oenologien parissa eläneenä hänen intohimonsa viiniin syntyi kuin itsestään jo varhaisessa iässä.

Founded in the heart of Aÿ Grand Cru in 1860 by Edmond de Ayala, Champagne Ayala preserves a distinctive know-how in which each cuvée expresses the elegance of Chardonnay, the House’s signature grape variety. Julian Gout belongs to a new generation of Champagne winemakers, guided by strong environmental awareness and deep respect for terroir. In this masterclass, Julian invites guests on a journey through time with a selection of Blanc de Blancs from distinct vintages, offering a unique perspective on Ayala’s mastery of Chardonnay across different seasons.

Each wine is a blend of Grands Crus and Premiers Crus, expressing the typicity of its vintage through the House’s hallmark low dosage. The 2019 vintage shines thanks to the exceptional sanitary condition of the grapes. The more challenging 2016 growing season is interpreted with elegance through Ayala’s limited-volume blend, revealing the solar character of the year. Considered one of the most remarkable harvests of this millennium, the 2012 vintage combines depth, complexity, and finesse. Then we get to taste the highly acclaimed 2008 vintage, whose perfect balance of sugar and acidity results in a truly outstanding Blanc de Blancs by Ayala. The final treat is the long-aged blend from the warm 2005 year of rich champagnes.

Appointed Cellar Master of Champagne Ayala in 2022, Julian Gout brings together continuity, precision, and innovation, guiding the House’s wines while embodying its core values of commitment, humility, and sharing. Born in Épernay in 1989 and raised in Romery in the Vallée de la Marne, Julian has always lived at the heart of the vineyards. Coming from a family of winegrowers and surrounded by oenologists, his passion for wine developed naturally from an early age.
