Vuonna 1829 perustettu Bollinger on samppanjatalojen ehdotonta eliittiä. Saman omistajasuvun hallussa pysynyt viinitalo nousi nykyiseen loistoonsa todellisen samppanjapersoona Madame ”Lilly” Bollingerin siirryttyä sen johtoon vuonna 1941. Talon omassa omistuksessa on 163 hehtaaria viinitarhoja, mikä kattaa yli 60 % sen rypäletarpeista. Grand ja Premier Cru –tarhoilta tulee vähintään 80 % Special Cuvéen ja 100 % La Grande Annéen sekä R.D:n rypäleistä. Laadusta tinkimättömään tyyliin kuuluu, että kaikki viinit valmistetaan itse ja ”Vins sur lattes” –viinin eli toisen käymisen läpikäyneen viinin ostamisesta talo pidättäytyy täysin. Bollingerilla on vannoutuneet kannattajansa ja Bollinger onkin paitsi James Bondin, myös Britannian hovin virallinen samppanja!
